At Baldauf, the label "organic" is neither a buzzword nor a passing fad, but has been part of our everyday cheese-making routine for many years and a conscious decision – out of conviction. Respect for nature in the Allgäu and species-appropriate farming methods have been cornerstones of the company's philosophy for 160 years. We set the highest possible standards for our organic products and adhere strictly and uncompromisingly to the "Bioland" organic standard.

"Baldauf Bio" -  Organic? Why yes, of course!

Both the Baldauf company and all our organic farmers are certified by "Bioland" and only ingredients from organic farming are used in the production of our organic cheese. Bioland is Germany's leading organic farming association, and the farming methods of its member farms are based on soil cultivation without synthetic pesticides such as glyphosate and chemical-synthetic nitrogen fertilisers. On the organic farms, all animals are kept in a species-appropriate manner and food is processed gently. The Bioland standard sets much stricter guidelines than, for example, the EU Organic Regulation, which only sets minimum requirements.


Bioland certification

The Bioland certification goes hand-in-hand with a NO to genetic engineering, factory farming, chemical-synthetic fertilisers and pesticides. We and our farmers operate according to standards that go far beyond the legal minimum standard for organic food. Part of the certification is the "Bioland seal" with the organic control number, which attests to a passed inspection according to the guidelines of the organic associations. Certification is only granted if all inputs and their use comply with the Bioland guidelines.

What exactly does ‘organic’ mean at Baldauf? 

Each of our organic farmers must be certified by Bioland and undergo their strict controls. In addition, we only use ingredients from controlled organic farming for the production of our organic products.

Animal welfare

All of our farmers mainly keep cows of the Allgäu Braunvieh breed. Although the ‘Allgäuer Braunvieh’ produce slightly less milk, they live almost twice as long as many high-performance breeds. In summer, the animals graze on lush pastures and in winter they are fed on the farm's own hay and not silage. The calves are fed milk for the first twelve weeks, supplemented with hay, grass and concentrated feed. The aim of our farmers is to maintain the performance of their cows without overtaxing them. At the moment, around 20% of our hay-milk farmers leave the calves with their mothers, and the trend is constantly rising. We support this model and are currently working to convince the remaining farmers - without coercion, pressure or regulations. Sustainable animal husbandry is only possible and feasible if the farmers themselves are fully behind it. We want to show end consumers and farmers that animal welfare is important and that mother-based calf rearing can work on a modern farm.

What is the difference between conventional cheese and organic cheese? 

Baldauf's organic cheese contains only ingredients from certified organic farming. However, the difference is not really big at Baldauf, because our conventional farmers also work certified without genetic engineering, maintain a high standard of animal welfare and do not use glyphosate.
