Vision

We stand for Allgäu cheese tradition and a close connection to our cultural landscape, which we have helped to shape over generations. 
Our focus is on a balanced, respectful approach to people and nature. 
We want to continuously develop the traditional cheese-making craft and thereby increase its value and benefit for the community.

Mission

The close, respectful partnership with our pasture milk farmers is an essential part of our company philosophy, with the aim of producing our milk responsibly. That is why we support and encourage our farmers in all improvements relating to sustainability and animal welfare. 
The economical use of energy and water is a central requirement in our company and all investments are harmonised with this. 
At Baldauf, milk is processed naturally. We cultivate tradition and promote innovation in order to continuously improve product quality. In this way, we actively create incentives for dairy farmers and customers. 
Cohesion and mutual support within the company are very important to us, because respectful, authentic and upright cooperation is the foundation of our joint success. 
The Allgäu community and regional networks are indispensable for us, because we see ourselves as part of the cultural landscape and our home region. This also includes local cohesion and mutual support.

Goals

Pasture milk farmers

  • fixed, stable milk prices, which are well above the southern German average, allow our farmers to continue to plan for the long term and secure their farm succession
  • farmers should purchase regional concentrated feed. Baldauf supports the regional feeding project.
  • in milk production, we create incentives so that farmers can further improve the quality of their livestock farming instead of increasing the quantity of milk
  • we strive for a closed cycle in milk production and are committed to promoting and advising our farmers in favour of cow-based calf rearing. This means that male calves can be reared on the farm or on partner farms

Energy consumption

  • in our own dairy, we want to save over 50% of the energy required for cheese production compared to 2020
  • our production is certified climate-neutral in accordance with DIN EN ISO 14064-1 since 1 January 2022

Production

  • in our in-house, recognised laboratory, we are constantly researching new, cheese-suitable cultures in the milk
  • we limit production capacities and focus on the quality of the product, organisation and customer friendliness. We put quality before quantity
