Baldauf Käse – 

Allgäu cheese tradition since 1862.

Originally, Martin Baldauf was a hat manufacturer until headgear went out of fashion. Martin had to reinvent himself, and so he hung his hat on the proverbial nail. In 1862, he founded the company bearing his name: a wholesale business for cheese and dairy products in Goßholz near Lindenberg in the beautiful Allgäu region. 
At this time, Gossholz was already home to important cheese merchants. The legendary Stadler family were among the pioneers, as Josef Aurel Stadler had already introduced Emmental cheese in 1821 and thus gave the starting signal for the transformation of the Allgäu into so-called grassland farming.
 Martin and Hans, the sons of Martin the First, brought the name Gebrüder Baldauf (Baldauf Brothers) into the cheese game and their love of Emmental cheese with them. The cheese they produced in the Allgäu began to conquer the world and won the first prize for the best of its kind in Chicago as early as 1897. 
Today, we are the fifth generation of our family to produce cheese. In the traditional way, according to old recipes, with our own milk cultures and a lot of passion. Sustainability and a respectful approach to nature and animals are essential for us – out of conviction. 
Our cheese tastes like first-class cheese should taste – delicately flavoured and well matured. The many awards on the international market confirm impeccable quality.
