You can literally feel the nature ! A very special cheese is made on selected alpine pastures at an altitude of 1,200 to 1,800 metres during the alpine summer, which lasts around 100 days : Baldauf mountain cheese from the high alpine pastures. The special flavour of the cheese comes from the lush alpine flowers and herbs of the alpine meadows where the cows graze. They provide a particularly rich milk, from which the dairyman produces this exceptionally flavoursome and digestible cheese. While still "green", the cheese is sent to our maturing cellars, where it matures for 6 to 16 months at the optimum temperature and care.
