Sennerei Hopfen

Before you start looking for signs of hop growing around the tranquil village of Hopfen – there are none! It's not that far from here to Tettnang, Germany's southernmost hop stronghold. But "our" hops probably owe their name to a medieval noble family. 

However, the village and the plant have one thing in common: Hops are calming. As an ingredient in beer, but even more so when visiting our "Hopfener Sennerei". Cheese has been made in the red-brick building for over 100 years. In a long line of master cheesemakers, today, it is Alois Keck to whom the farmers of Hopfen entrust their valuable Allgäu raw pasture milk. Keck, a multiple award-winning master cheesemaker, turns it into "a heavenly piece of Allgäu". Or to be precise: Several heavenly pieces, and in different sizes too – the "Baldauf Alpkäse" and the "Alpkäsle". One weighs 27 kg, its smaller siblings around 900 g, each one an incomparable piece of artisan cheese art, magnificent to look at, with a fine bite and a mild, spicy flavour.
Alois Keck and his employees in Hopfen process around 10,000 litres of fresh, silage-free and untreated Allgäu raw milk every day. Large and small blocks are shaped by hand and then allowed to mature for at least four months before they are sold in shops with a golden yellow rind and unmistakable flavour.
